I spent all day yesterday baking two of my usual Christmas cookies: whipped shortbread, which melt in your mouth, and ginger snaps. Later this week I hope to have time to bake my chocolate chip cookies and sugar cookies. But holy crow, has butter gotten expensive! You need real butter for those shortbread cookies, but buying all that butter sure put a dent in my budget.
